Whiskey Rub Lamb Skewers

Serving Size: Makes 4 servings
Prep Time:About 15 minutes
Cook Time: 8 to 12 minutes

Ingredients:
1 1/2 pounds boneless lamb (preferably from the leg), cut into 1-inch cubes
1 tablespoon coarsely ground black pepper
2 teaspoons freeze dried shallots
1 teaspoon coarsely ground green peppercorns
1 teaspoon minced rosemary
1 large clove minced garlic
2 tablespoons Bourbon

Instructions:
Mix seasonings with Bourbon. Roll lamb cubes in seasoning mixture and thread on skewers. Grill directly over medium-hot coals for 8 to 12 minutes, until the meat reaches 160°F for medium. Lamb should be set aside for a few minutes before serving.
